OUR SEPTEMBER COFFEE MORNING/ SUPPORT GROUP IS ON SEPTEMBER 7TH AT THE EKCO SPORTS AND SOCIAL CLUB, THORNFORD GARDENS, SS2 6PU. DROP IN FROM 10 TO AROUND 12.30.

We would like to say a big thank you to Jane Needham who held an afternoon tea, in memory of her late sister, Carol Nolan, who passed away at the age of 34.
Jane raised £555 which she has donated to COPES in memory of her sister.
Jane is a qualified psychotherapeutic counsellor, hypnotherapist, reiki/crystal and EFT practitioner and, very generously, offers free sessions to COPES members who are about to start treatment, currently going through treatment and within the year after treatment, in her practice in Dunmow, Essex. Spotlight Charity Appeal Update:
Many of us have been involved in raising money for the Southend Hospital’s Spotlight Appeal, for enhanced radiotherapy equipment. We donated £2,000 on behalf of COPES members and so many of you have been saving 5p pieces in little jam jars for the last couple of years. We’re thrilled to learn that the Spotlight Appeal has raised 73% of the target amount. A fabulous effort.
COPES EXEC PLEA FOR HELP
Most of you will know that Sue has had to step down as treasurer owing to family responsibilities. She took on the role as a temporary measure several years ago.
We therefore have no treasurer.
We are keeping going, wIth the exec committee doing what we can to keep COPES ticking over, in a safe and responsible way, but we desperately need someone to assist the Exec Committee (Wendy, Chris and Sue) with banking, keeping count of our money and helping to manage our petty cash.
Sue is willing to work with anyone who can volunteer and we will help out with any expenses etc.
Do you know of anyone who could help us? They don’t have to be a COPES member.
Please help us to help you ~ COPES CAN’T KEEP GOING WITHOUT A TREASURER.
AS PROMISED ~ OUR HEALTHY WELSH SOUP RECIPE
This soup is called ‘cawl’ in Wales (pronounced cowl). There are as many recipes as there are families. All have similar elements. Here is my low fat veggie adaptation.
Dry fry a large onion in a pan with a lid, sweating it until lightly browned (traditionally, lamb is added here); Add about half a large swede, peeled and diced, stir to lightly brown it; Add about 1.5 litres of stock (meat or vegetable) then add a large peeled and diced carrot, a handful of pearl barley & a peeled & diced potato. Cover & cook for about 40 min. Add 1 or 2 leeks, cleaned & chopped into small pieces, & a generous helping of parsley (fresh is best but dried will do). Cook for about 30 min. Season & thicken to taste with cornflour.

We would like to congratulate Pete Merrick, brother of COPES member, Louise Scully, who successfully completed his epic charity cycle ride from Land’s End to John o’ Groats in August. Pete is still celebrating/recovering. He will update us soon.
